In this particular study, frying performance of palm super olein was compared to that of olive oil and virgin olive oil. The overall result is in favour of palm oil as compared to olive. Among the parameters used for comparison in this study are oil absorbtion, free fatty acid (FFA), peroxide value (PV), total polar compound (TPC) among others.

Palm oil (and its products) has good resistance to oxidation and heat at prolonged elevated temperatures; hence, making palm oil an ideal ingredient in frying oilblends. Manufacturers and end-users around the world incorporate high percentages of palm oil in their frying oil blends for both performance and economic reasons.
Palm oil, palm kernel oil and coconut oil are produced locally. Some amounts of CPO, crude palm kernel oil and coconut oil are imported, as are soybean, palm kernel and copra for crushing to produce oils (Table 1). The land area under oil palm has been extended by an average of 3.7% per annum since 2006 to exceed 5 million ha last year (Table 2).
