As to the fatty acid profile in the sesame oil, the main components in the all extracts were oleic and linoleic acid. For the Soxhlet extraction, the use of different organic solvents showed that they change the yield of the oil extraction process as well its fatty acid composition, giving statistically different results (P< 0.05).
