A rapid method for quantitative determination of free fatty acids from crude palm oil to bleached palm oil (BPO) and then distilled BPO and refluxed BPO by Fourier transform infrared (FTIR) transmission spectroscopy is described.
Palm oil quality and price is dependent on the free fatty acids (FFA) content in palm oil. High content of free fatty acids in palm oil affect the quality of palm oil and leads to various health and environmental issues. The maximum free fatty acids content set by the Palm Oil Refiners Association of Malaysia in crude palm oil is 5 % and < 0.1 % in refined bleached deodorized oil.

A rapid direct Fourier transform infrared (FTIR) spectroscopic method using a 100 µ BaF 2 transmission cell was developed for the determination of free fatty acid (FFA) in crude palm oil (CPO) and refined-bleached-deodorized (RBD) palm olein, covering an analytical range of 3.0–6.5% and 0.07–0.6% FFA, respectively. The samples were prepared by hydrolyzing oil with enzyme in an incubator.
